Christians: Of the things not mentioned in the bible - how do you pick the one's you'll agree or disagree with

Examples: cavemen, dinosaurs, evolution, gravity, DNA cells....etc. were not mentioned. How do you decide what things you'll admit are evident and what things you'll deny?
